120ml extra virgin olive oil
4x80gr pieces Kefalotyri saganaki cheese
150gr all purpose flour
A good drizzle of thyme honey
Dip the cheese in ice-cold water and then into flour so that you cover all sides. Repeat once more.
Heat a little olive oil in a large non-stick frying pan and fry the cheese until golden on both sides, turning as necessary.
Serve immediately with some lemon, honey drizzle & freshly grounded black pepper.
